Roasted Pork Loin 

Ingredients

· 2-3 lb pork loin

·  1 ½ lbs baby potatoes, halved (or quartered if larger than golf ball)

· 3-4 large carrots, peeled and cut into large chucks

· 2-3 parsnips, peeled and cut into large chucks

· 2-3 tbsp olive oil (divided) 

· 2-3 tbsp Signature Pork Blend (or to taste)

· 2-3 tbsp Seasoning Salt

Instructions

1. Preheat oven to 400℉

2. Place pork loin in center of roasting pan.

3. Drizzle pork with 1½ tbsp olive oil and coat evenly with Signature Pork Blend 

4. In a bowl, toss potatoes, carrots, and parsnips with remaining olive oil and seasoning salt.

5. Arrange vegetables around the pork in a single layer.

6. Roast uncovered for 45-60 minutes, or until pork reaches an internal temperature of 145°F.

7. Let rest 5-10 minutes before slicing. Serve with roasted vegetables.
